Low carb cucumber finger sandwiches. For the bread in this recipe, I used the Focaccia Style Flax Bread Recipe at About.com which has a great video to go along with the recipe on how to make it. I was able to cut the bread into 10 squares.
After the bread cooled, I lightly toasted each square in the toaster to dry it out a little. You can use any low carb bread you want.
- 3 oz cream cheese
- 1 medium cucumber
- 1 Tablespoon sour cream
- dash salt
- dash pepper
- dash celery salt
- dash garlic powder
- low carb flax bread
- Grate cucumber and let drain until most of the liquid is gone.
- Combine the cream cheese, medium cucumber, sour cream until smooth. Season with salt, pepper, celery salt and garlic powder.
- Cut the low carb flax bread squares in half through the middle height of the slice to make them thinner. Spread cucumber mix on bottom slice and cover with top slice. Cut in half to make finger size.
Carbs per sandwich: <1 (about 0.77) grams
