This looks great and I'll definitely give this a go! I'll also try using this recipe as a basis for a gratin dauphinoise for Christmas!
Also, thanks for saying 'mock' potato in the recipe description! Refreshingly straightforward!! :)

Made this for dinner tonight. I cooked it for over an hour (1 hour 20 minutes!) and the Daikon Radish still wasn't soft! If I ever use daikon again, I will boil them a bit before I use them in baking. Recipe overall was just meh. I think 1 tsp of Xantham gum was too much and may have contributed to the daikon not cooking. If I make this again, and I probably won't, I will only use 1/4 tsp xantham gum.

Daikon is genius! This was a delicious recipe. I used chicken sausage in ours yesterday. Made corned beef hash with daikon this morning and then a seafood chowder with daikon for supper tonight. Awesome potato hack!

I haven't tried fries, but it works well for au gratin. The chips should work out. Sometime, I just slice the daikon and use it raw like a cracker.

*Loved* this recipe, and so did my husband! I've enjoyed using cauliflower as a substitute for potatoes and for pasta, and it's close in many dishes, but this was like eating sliced potatoes. Might daikon work for 'potatoes' au gratin? Potato chips? French fries? We're going to find out!
