I get that a pie crust would slow you down but I prefer something closer to the classic. In terms of a night-before-but-not-frozen prep, you can completely make the filling ahead the night before and put it in the pan you will bake in then place it in the fridge, covered. You can also roll out a top crust and put it in a large baggie the night before as well. Then merely put the crust in place before putting the pan in the oven though the crust may crumble a bit, but like you said the the above recipe's biscuit top, there's no need to be fussy. Just another option, as would swapping the Italian spices for poultry seasoning and the Parmesan for cream cheese for those of us who grew up on Banquet! Thanks so much for options!

This was very good, however my sauce never thickened. It was more like a pot pie soup but very tasty! Next time I think I would add a little xanthan gum to the sauce to help thicken it more. Otherwise it was quick and easy to put together and very good.

It can be halved if desired and baked in an 8x8 or 9x9 pan. I'd check it after 15-20 minutes, but baking time shouldn't change by much.

This recipe sounds very good; am anxious to try it. Have one question: I have a very small family (3) and only 2 of us will eat the veggies. Could I halve the recipe and make it in a 9" pie pan? How would that affect the baking time? Thanks. I make many, many of your recipes and enjoy your blog.
