In reply to <a href="https://lowcarbyum.com/no-egg-cookies/#comment-177603">akshita</a>.

We're lacto vegetarian (no meat, fish, eggs--dairy is ok), and a friend who is GF is coming for thanksgiving. I'm going to try this as a base for pumpkin pie bars; the base for the pumpkin pie bars uses almond flour, I have a sensitivity to almonds and I've been searching for a coconut flour recipe since CF can't be substituted 1:1 for AF. I will be thrilled if this works!

I made the dough and made very small cookies and only had 8. 6 tablespoons of coconut flour seems like such a small amount for 16 cookies, and if you only get 8 with 2 TB of honey, each cookie would seem to have a lot of carbs. I'm wondering if I missed something?

Yes! Duck eggs are great but harder to find. I did locate a farmer who sells them. They also bake things much fluffier than chicken eggs.

Thank you! Can’t wait to try it this afternoon.

I, too, developed an egg allergy after an extended period of going egg-crazy on Whole30 and Keto. I developed a lot of food allergies, actually, but the eggs are the big one. So crazy. Of all the research I’ve done trying to figure out wth, this recipe description that you wrote is the only other documentation I have been able to find of this happening to anyone else.

I’ve gotten my hands on some duck eggs, so I’m going to try those out this week. I’ll let you know how I do. Have you tried duck eggs yet?

Coconut flour can be very absorbent. So you could try adding in more oil or almond milk. Adding an egg should help too.

I am STRUGGLING with my first batch (by myself) of coconut flour cookies. Hi Lisa, Can you please help me. AND I will try your recipes. I need assistance especially with regards to liquid. I don't mind using eggs, the recipe I have (below) doesn't call for it. The batter doesn't hold together. Should I use a couple T of water? The recipe and ingredients I found and was following is on the back of JANS Organic Coconut Flour bag.
Please let me know if you can assist, I am abbreviating obvious words. Here is the recipe: 2 C Co flour 1/2 C Co sugar 1/2 t BP 1/2 t baking s 1/2 t salt 1/2 C Choc Chip 1/3 C solidified C oil 2 T Alm Milk 2 t Vanilla extract.
I haven't put the choc chips in yet. I am trying to form 2 cookies with and with out the chips. I am miffed. the recipe made looks like pure white sand, NOT a batter or CLOSE!-
Thank you Lisa ..., Lisa E. ~ So Florida

What a great little recipe! I used 1 Tbs of Maple Syrup and 1 Tbs of Honey for the sweetener. And I decided to add one scoop of Quest Vanilla Protein Powder. Because of this additional dry ingredient, I had to add some water until I was able to obtain a cookie dough consistency. These came out tasty! Thank you so much for sharing!

I tried these cookies and it came out moist and crumbly, like shortbread.

I made some revisions to the recipe:
1. I replaced the sauce with half a banana. Next time, I'll use either 1 or 1.5 bananas since it wasn't sweet enough for me.
2. I used about 2-3 TBSP of unsweetened flakes

Next time, I might top these with various jams and/or add more coconut flakes for a macaroon taste.

Thanks for the recipe. Loved it and so simple!

For me it was hard to divide the dough into balls cause it was very crumbly, so I added 1 flax egg . Didn't have any syrup so I made one with 2 spoons of raw sugar and a bit of boiling water. Also added a bit of vegan chocolate chips and the results were AMAZING! Thank your for the recipe!
