I don’t have a lot of time for cooking outside of the blog so I’m always on the lookout for super simple recipes. That’s why I decided to take a look at the 30 Dinners in 30 Minutes Cookbook by Maya Krampf of Wholesome Yum.
After browsing through the recipes, I decided to give the Philly Cheesesteak Zucchini Boats recipe a try. My mother grew up in Philadelphia and I visited there a lot when I was a kid to see my grandparents.
The steak with cheese, peppers and onions brought back the taste of the hot Philly cheesesteak hoagies we used to get in Philadelphia. Although the hoagies were served on toasted bread rolls, these days, I’d rather have zucchini.
Maya adds in mushrooms to her recipe. I prefer leaving them out, especially since I recently found out I have a food sensitivity to them.
It’s super simple to make zucchini boats. I’ve made ones filled with pepperoni pizza filling. I call them Zucchini Pizza Boats.
However, the zucchini filled with steak and cheese is super awesome. And, I can’t believe how easy it is to do!
Using roast beef slices from the deli makes the prep a breeze. You will need to cut up the peppers and onions, though, unless you can find them pre-cut.
I had a small can of mushrooms so I used those rather than slicing up fresh. You’ll want the peppers, onions, and mushrooms to be cooked first before baking for the most flavor.
Provolone cheese is what’s often used in Philly cheesesteak hoagies. And, the smoky flavor goes will with the beef slices, peppers, and onions.
These yummy steak with cheese zucchini boats are sure to become a regular on our menu. I really enjoyed them.
