Apple Cider Vinegar Cucumber Salad

Cold salads are a staple for me in the hot summer weather. This is a refreshing cucumber salad with a basic oil and vinegar dressing.

Cucumber salad typically has sugar added to offset the vinegar.

This low carb apple cider vinegar cucumber salad recipe uses stevia as the sweetener.

Stevia is the perfect low carb sweetener to tone down the vinegar and make it more palatable without  adding any carbs.

Apple cider vinegar has always been my vinegar of choice for the dressing.

And, it has been known to have a lot of health benefits.

4 cucumbers ¼ cup onion , finely chopped 1 sugar substitute packet(s) ½ cup apple cider vinegar 1 teaspoon basil 1 teaspoon celery seed ½ cup olive oil salt pepper

INGREDIENTS

Slice cucumbers and place in a large bowl.

INSTRUCTIONS

Mix remaining ingredients together in a small bowl.

Pour oil and vinegar over cucumbers. Toss to coat.
