These are delicious! I used erythritol (plus some stevia and monk fruit sweetener to taste), Lily's white chocolate chips, and Pulsin unflavoured whey protein powder, but next time for a simpler version I might try it without the chocolate chips (maybe more nuts??) and use more coconut flour instead of the protein powder. I also added some orange extract and lemon zest for a bit more oomph, and drizzled with a dark chocolate ganache made with 100% chocolate, double cream, and powdered allulose. Perfect! Next time I'll make a more "solid" drizzle using just melted chocolate and powdered sweetener (i.e. no cream). This is wonderful... I see myself making this often. Thank you :)

Delicious! Before I started watching my sugar intake, I used to love the white chocolate macadamia nut cookies sold at Subway. To bake these, I used coconut flour instead of the whey, birch xylitol as my sweetener, and Bake Believe sugar-free white chocolate chips (sold at wal-mart). These come pretty close to the Subway version and are a welcome addition to my keto cookies all-star roster! Thank you for sharing.
