A healthy recipe for slow cooker turkey chili that's low carb and full of flavor. It's dairy-free, but cheese or sour cream could be added on top if desired.

Ingredients

  • 1 tablespoon olive oil or avocado oil
  • 1 pound ground turkey
  • 4 cloves garlic minced
  • 2 medium pablano peppers chopped (or other chili peppers)
  • 1 tablespoon cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon dried onion
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cayenne pepper or chipolte
  • 32 ounces chicken bone broth or turkey broth
  • 1 head cauliflower broken into small pieces

Instructions

  • Brown turkey in olive oil. Add to crock pot. Then add garlic, peppers, cumin, oregano, dried onion, chili powder, cayenne pepper and broth.  Cook on high 2-3 hours or low 4-6 hours.
  • Add in cauliflower pieces and cook an additional half hour on high or hour on low.

Notes

For a thicker chili, you can add in some pumpkin puree, but it will up the carb count.
