  • Combine almond flour, coconut flour, baking powder, and salt in a microwavable coffee mug.
  • Add egg and avocado oil. Stir well with a fork.
  • Microwave on high for 60 to 90 seconds.
  • Remove the muffin from the cup using a butter knife and slice in half.
