Ingredients

  • 1 batch almond Flour Biscuits
  • ½ pound ground breakfast sausage
  • 6 tablespoons heavy whipping cream
  • 6 tablespoons unsweetened almond milk
  • ¼ teaspoon xanthan gum to thicken
  • Pinch salt or to taste
  • Pinch pepper or to taste
  • Parsley optional garnish

Instructions

  • Prepare biscuits.
  • While the biscuits are baking, add the sausage to a 10-inch skillet over medium high heat on the stove. Sauté, using the spoon to break up the meat, until sausage is completely browned, about 8 to 10 minutes.
  • Add the heavy whipping cream and almond milk to the skillet, lowering the heat to medium. Sprinkle in xanthan gum, salt, and pepper. Continue to stir and cook the sausage gravy until it has thickened to your liking. Additional xanthan gum can be added for a thicker gravy.
  • Cut the biscuits in half and top with about ¼ cup of the sausage gravy to serve. Add freshly chopped parsley for garnish, if desired.

Notes

Be sure to use sugar-free sausage or meat without any added sugars. This type of sausage is usually marked as being "paleo" friendly. The best kind of sausage will have lots of spice to it.
Any leftover biscuits or gravy can be stored up to 5 days in the refrigerator or up to 3 months in the freezer. If frozen, it's best to thaw overnight in the refrigerator before reheating.
Biscuits can be reheated for 20 to 40 seconds in the microwave. Or place them in a preheated oven or the toaster until warmed. Gravy can be reheated in a pot on the stovetop or a dish in the microwave.
