Ground Turkey Cauliflower Casserole

When you need a simple and filling dinner, make this ground turkey and cauliflower rice casserole. It's filling, creamy, and really low in carbs!

Ingredients

  • 1 pound ground turkey
  • 1 small head cauliflower rice (2 cups)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and pepper to taste
  • ½ cup heavy whipping cream
  • ½ cup cheddar cheese shredded
  • ½ cup mozzarella cheese shredded
  • 1 tablespoon butter
  • 4 ounces cream cheese cut into cubes

Instructions

  • Preheat oven to 400°F.
  • Rice the cauliflower, if needed. The riced cauliflower does not need to be cooked first.
  • Brown turkey in skillet and sprinkle with garlic powder, onion powder, salt and pepper.
  • Once browned, add in cauliflower, cream cheese, butter, heavy whipping cream, ¼ cup cheddar, ¼ cup mozzarella. Stir well to combine.
  • Pour into casserole dish. Sprinkle remaining cheese on top.
  • Bake 30 minutes.

Notes

Make the cauliflower rice ahead of time. Store the cooked cauliflower rice in the refrigerator for up to three days.
Add extra cheese on top. The more cheese you use, the better it will taste.
Make it as spicy as you want. My recipe is pretty mild, but it has a lot of room for creativity.
