Ingredients

  • cup butter melted
  • 6 eggs
  • 1 tablespoon cinnamon
  • 2 teaspoons sugar-free vanilla extract
  • 1 teaspoon maple extract
  • 5-10 drops stevia glycerite or 1 to 1 ½ tablespoons Swerve sweetener
  • ½ teaspoon salt
  • ½ cup sifted coconut flour
  • ½ teaspoon xanthan gum or guar gum (optional)
  • ½ teaspoon baking powder

Instructions

  • Blend together eggs, butter, cinnamon, vanilla extract, maple extract, stevia, and salt.
  • Combine coconut flour with baking powder and guar or xanthan gum (if using).
  • Whisk coconut flour mixture into batter until there are no lumps.
  • Spoon into a greased donut pan. Bake at 400 degrees F for 15 minutes.
