My favorite! I make multiple batches of this every year when I’m overrun with zucchini and freeze it. (I make it in an 8x8 pan as a snack cake. Never tried a loaf.)
I omit cinnamon and add some instant coffee to enhance chocolate flavor. I’ve used a variety of alternative granular sweeteners and they’ve all worked fine.

So sorry this one didn&#039;t work out. It is supposed to have a cake-like texture similar. Removing excess moisture from the zucchini or decreasing the amount of coconut oil to 3 tablespoons should have helped with that.]]></description>
