Hey! Would a blender help?
Gelatine is sometimes hard to dissolve. … in any recipe!
Blend the ingredients first in the blender with warm to hot coconut cream and boiling hot water THEN boil on the stove if you wish. The blender will pulverize the gelatine into the mixture. That may solve the problem. I make DECAF bulletproof coffee jello everyday in my blender and the jello does not separate…I think the process is similar!

I did dissolve the gelatin completely. But as others have said, mine separated into. A plain and tasteless bottom gelatin layer and a coconut fat top layer. In addition, while the syrup version tasted sweet, the finished gelatin does not. Rather disappointed, as I love coconut. ☹️

Water must be boiling hot and whisk it in a bowl to dissolve..Nothing to do with the Coconut Fat..

I liked the texture of this. Imagine obsessed with the jelly & chewy textures. I didn't have coconut cream, so I just used coconut milk. It works, but you will get the fat separate at the top.. I don't mind it. I didn't care if stevia. I usually use stevia drops in a tea with lemon & apple cider vinegar, which I believes cuts the bitter & after taste. Next time I try dissolve monk fruit sugar in the hot water.

I love the recipe. It was easy to make but I did have trouble with the gelatin settling at the bottom. I didn’t know this occurred until I removed them from the pan to find a layer of gelatin. Any idea what might of happened.
