					<description><![CDATA[I tried this yesterday and it was very good and a nice change from our usual vegetables. It did take some effort to find the celery root but it was in stock in a local specialty food store. I always keep radishes on hand to toss into salad and it was great to try them roasted.

Peeling and cutting the celery root is more difficult than potatoes but I liked the result and so will do it again. I tossed it with a little olive oil and grilled steak seasoning that I like to use for veggies. I also put a couple dots of butter as it roasted and this helped to bring out the flavor.
