My version of this spinach quiche. 12 oz spinach. 6 eggs. 2 8 oz cans mushrooms. 1-3c dry parmesan cheese, 2/3c shredded mozzarella and 2/3c shredded cheddar jack cheese. Mozzarella for top also. 1/4 tsp garlic powder and 1/4 tsp onion powder, 1/4 tsp paprika, and salt(optional) and pepper. About 10-12 slices turkey pepperoni cut up small. 1/3c skim milk. Of course spinach is drained and cooled before adding to eggs. Mushrooms drained also.
I have used this recipe several times and it’s different every time depending on what ingredients I have available. One can of mushrooms might be enough for most but we really like them and I usually eat some out of the can lol

Just watch out for the lower fat dairy products as they do contain more sugar and carbs. Enjoy the recipes!

Hi, won't the water added to the mixture dilute the flavors and make it mushy? Just curious. Sounds really good. Think I may try it with Feta added.
