Wonderful Guide! You left out another amazing benefit of coconut flour - its cost compared to most nut and seed flours. No only is coconut flour less costly ounce for ounce, it is amazingly so when you consider that you use only 1/4 to 1/3 the amount of flour in comparable recipes due to its absorptive nature. You do have to consider that cost a little offset by the extra egg or coconut milk needed, but still overall you come out ahead!

I LOVE these. These turned out AMAZING. I mostly kept them true to the recipe, my baking powder is "double acting", and I added 1/4 tsp of baking soda for rising. Used garlic paste instead of powder, and Balderson Royal cheddar. Everything except coconut flour and cheddar I buzzed in my blender to aerate too. Yielded 12 for me and they are so delicious.
