I use roasted hazelnuts with the skins removed to make hazelnut flour. The best way to grind them is to pulse in a coffee grinder. They should grind finely without turning into butter as long as you don't overdo the grinding.

Hi Lisa, can you elaborate on the making of hazelnut flour? Do you roast the nuts first to take the skin off? I think then I would end up with hazelnut butter, right? I make my own sunflowr seed flour but using raw sunflower seeds. I can't eat almonds so I'm always looking for alternative flours for baking. I have used many of your recipes but actually took the time this morning to read your blog. Great info, ie: combining low carb and ww is a brilliant idea! I am 62 years old and I've been doing keto since Jan 2020 lost 35lbs but still have 20 to go and have stalled for the last 6 months. I am going to try the low carb ww combo and see if that helps me with the last 20 lbs. Thank you so much for all the great information and recipes.
