Add the water and sweetener to a saucepan over medium heat on the stove. Whisk to dissolve the sweetener into the water.
Bring the mixture to a boil.
Reduce the heat to medium/low, and slowly whisk in the xanthan gum.
Simmer for 5 minutes.
Remove from the heat and let cool.
Use immediately, or store in an airtight container in the fridge for 1-2 weeks.
