An easy low carb tomato appetizer with spinach and bacon that takes little time to prepare. Friends and family will love these tasty bites.

Ingredients

  • 2 large tomatoes
  • ½ cup baby spinach chopped
  • ½ Cup freshly grated mozzarella cheese
  • 5 slices bacon
  • olive oil

Instructions

  • Pre-heat oven at 350°.
  • In a pan, cook bacon until slightly crisp. Drain and cut into bite size pieces.
  • Properly wash tomatoes and slice in ⅓ inch rounds each. Makes 6 rounds and 2 bottom rounds. You can use the latter in another dish (if you prefer uniform rounds).
  • Arrange tomatoes and slightly brush with olive oil. Top with chopped spinach.
  • Add cooked bacon then top with grated mozzarella cheese.
  • Bake for 5 minutes or until cheese is melted or if you want, a little golden brown on top.
  • Serve immediately and enjoy every bite.
