Ingredients

  • 1 ½ pounds pork tenderloin sliced thin
  • 1 tablespoon olive or avocado oil
  • 2 cloves garlic minced
  • 1 medium cucumber sliced
  • 12 ounce package kelp noodles
  • ½ teaspoon red pepper flakes
  • 2 tablespoons rice vinegar
  • 2 teaspoons sesame oil
  • 1 teaspoon coconut aminos or soy aminos
  • ½ teaspoon ginger minced
  • salt and pepper to taste

Instructions

  • Brown sliced pork in skillet with oil and garlic.
  • Stir in sliced cucumber and kelp noodles.
  • Season with pepper flakes, vinegar, sesame oil, aminos, ginger, salt, and pepper.
  • Cover and cook another 5-7 minutes.
