- 1 medium eggplant diced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1 pound ground beef
- 2 cloves garlic minced
- 2 cups tomato coarsely chopped
- 1 tablespoon soy aminos or gluten free soy sauce
Sprinkle eggplant with salt and salute in olive oil until softened. Set aside.
Cook ground beef with garlic until meat is browned.
Add eggplant and tomato to ground beef. Stir in soy aminos. Cook until liquid is reduced.
Serve alone or over cauliflower rice.
