Ingredients

  • 1 medium eggplant diced
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1 pound ground beef
  • 2 cloves garlic minced
  • 2 cups tomato coarsely chopped
  • 1 tablespoon soy aminos or gluten free soy sauce

Instructions

  • Sprinkle eggplant with salt and salute in olive oil until softened. Set aside.
  • Cook ground beef with garlic until meat is browned.
  • Add eggplant and tomato to ground beef. Stir in soy aminos. Cook until liquid is reduced.
  • Serve alone or over cauliflower rice.
