Ingredients

  • 2 cups medium zucchini sliced and quartered (about 2 )
  • 2 cups medium yellow squash sliced and quartered (about 2 )
  • 1/4 teaspoon pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 cup butter cut in cubes
  • 1/4 cup Parmesan or Asiago cheese grated
  • 1/4 cup crushed pork rinds optional

Instructions

  1. Place cut zucchini and yellow squash in crock pot.
  2. Sprinkle with pepper, Italian seasoning, garlic powder, and sea salt.
  3. Top with butter pieces, cheese, and pork rinds.
  4. Cover and cook on low for 4-6 hours.
