Pesto Chicken Salad Wrap - Paleo

A simple chicken salad that whips up in a jiffy. Using cabbage or lettuce leaves makes it low carb and paleo friendly. And it packs well in a lunch bag for work.
- 2 cups chicken cooked and cubed
- 1/2 cup basil pesto
- 1/2 cup mayonnaise
- 1/3 cup celery chopped (about 2 ribs)
- salt and pepper to taste
Homemade Basil Pesto
- 2 cups basil leaves
- 2 teaspoons garlic minced
- 1/4 cup olive oil
- 3 tablespoons pecans toasted and cooled
- tomato slices
- avocado slices
- cucumber slices
- cheese for non-paleo
Prepare homemade pesto by combining all the basil pest ingredients in a food processor or blender until smooth.
Add chicken, pesto, mayonnaise, celery, salt, and pepper to medium bowl and stir until well combined.
To make a sandwich, place scoop of chicken salad on a lettuce or cabbage leaf and add any optional ingredients. Roll up and enjoy!
