Cheesy ground mini meatloaves are sure to be a hit. The best part is that they come pre-portioned with no need for slicing!

  • 1 tablespoon coconut oil
  • 2 pounds ground turkey
  • 8 ounces mozzarella cheese shredded
  • 1/2 cup onion chopped
  • 3/4 cup crushed pork rinds
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce see note
  • 4 cloves garlic finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 2 tablespoons fresh parsley
  • sugar free ketchup optional


  • Preheat oven to 350°F. Grease 12 muffin tins with coconut oil.
  • Mix all ingredients together in a large bowl until well blended.
  • Divide meat mixture evenly between the 12 greased muffin tins.
  • Bake at 350°F for about 55 minutes or until meat is fully cooked and browned.


Worcestershire sauce typically contains gluten. Look for one that is labeled gluten free or make a homemade substitute if you need gluten-free.
Crushed pork rinds can be replaced with about 1/4 cup of coconut flour if desired.
Mozzarella can be replaced with other cheese or cheese blends. Cheddar works well in the recipe.
Chopped onions can be replaced with dried minced onions or onion powder to save prep time.
