Ingredients

  • 1 medium head of cauliflower cut into florets
  • 1 ½ cups heavy whipping cream
  • 4 tablespoons unsalted butter
  • 1 teaspoon ground mustard
  • 1 ½ cups shredded cheddar cheese divided
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F.
  • Steam the cauliflower for about 10 minutes.
  • While the cauliflower is steaming, add the butter to a saucepan over medium heat on the stove.
  • Once the butter has melted, whisk in the heavy whipping cream, ground mustard and salt and pepper to taste. Continue to cook the sauce down until it thickens.
  • Add 1 ¼ cups of the cheese to the thickened sauce and whisk until completely melted.
  • Place the steamed cauliflower into an oven-proof dish or skillet and pour the cheese mixture over the top.
  • Sprinkle the remaining ¼ cup of cheese on top.
  • Bake for 25-30 minutes, remove and let sit for 5-10 minutes before serving.

Notes

For added spice, chop up half a jalapeño and add it to the cauliflower. Add more or less depending on how spicy you want it. You can also just add a few drops of hot sauce to the cheese sauce, or sprinkle some red pepper flakes on top.
If you want to have a crumb topping on the casserole, add some crushed unflavored pork rind crumbs on top.

Tips to avoid a watery sauce:

  • If you steam frozen cauliflower, don't add the sauce to the veggies straight out of the bag. Let them cool off on a plate and pat them dry first.
  • You should also pat the cauliflower dry if you boil the fresh cauliflower instead of steaming them.
  • Boiling or steaming the florets in the microwave will make the cauliflower retain water and this water will make your sauce thinner.
