This marinated Greek souvlaki beef is charred, juicy, and smells so flavorful that cooking it is as fun as eating it. These kabobs are perfect for group BBQs or outdoor lunches.

Ingredients

For the beef marinade

  • 1 lb top sirloin beef cut in 1-inch cubes
  • 1 tablespoon dijon mustard
  • 1 lemon juice
  • 1 lemon zests
  • ½ tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 garlic clove minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste

For assembling the skewers

  • 1 green bell pepper cut in 1-inch cubes
  • 1 red bell pepper cut in 1-inch cubes
  • 1 large onion cut in 1-inch cubes or petals
  • 1 tablespoon olive oil
  • salt and pepper

Instructions

  • To a large bowl, add the meat and marinade ingredients. Toss to coat. Cover bowl with a lid, plastic wrap and leave in the fridge for 1 hour or overnight for best results.
  • Before cooking. Place the cubed veggies in a medium bowl with 1 tablespoon of olive oil, salt and pepper to taste.
  • If using wooden skewers, dump them in water to avoid burning during cooking time. Cut the tips to fit your skillet.
  • Thread the beef along with the veggies between each piece of meat.
  • Brush the skewers with the remaining marinade.
  • Bring a large grill pan over medium heat, add 1 tablespoon olive oil, cook the skewers for 8 minutes, 2 minutes on each side. Drizzle more olive oil along the process to avoid burning.
  • Transfer to a serving platter and cover with foil for 5 minutes before serving.

Notes

Use a food processor or blender to mix the marinade. Using one of these tools will ensure the ingredients combine completely.
Soak the wooden skewers before you cook the skewers. This will prevent them from burning on your outdoor grill.
Pound the meat thinner. This way, your souvlaki beef will grill quicker.
