An easy crock pot stew made with leftover turkey and low carb vegetables. It's a simple dish to enjoy for a light lunch or dinner.

Ingredients

  • ½ cup onion chopped
  • 4 cloves garlic minced
  • 4 ribs celery chopped
  • 2 pounds leftover turkey cut into cubes
  • 6 cups turkey stock
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 2 medium turnips
  • 12 ounces green beans trimmed and chopped
  • 2 teaspoons salt or more to taste
  • ½ teaspoon pepper optional

Instructions

  • Place all ingredients in crock pot.
  • Cook on low for 8 hours or high for 4 hours.

Notes

Heavy cream can be added for a creamy soup.
Add in some xanthan gum or glucomannan powder to thicken if desired.
