A dairy-free cream of turkey soup with cabbage and kale that's low in carbs and Atkins friendly. It's a great recipe for Sunday meal prep when following an Atkins lifestyle.

Ingredients

  • 2 tablespoons coconut oil
  • 1 small onion chopped
  • 2 ribs celery
  • 3 cloves garlic minced
  • 13.5 ounces coconut milk 1 can
  • 1 1/2 cups radishes chopped
  • 2 cups turkey cooked and cubed
  • 1 quart turkey broth 32 fluid ounces
  • 3 sprigs fresh thyme leaves
  • 1 teaspoon sea salt
  • 1/8 teaspoon ground black pepper
  • 8 ounces cabbage sliced thin
  • 5 ounces kale roughly chopped

Instructions

  • In Dutch oven or large pot, melt coconut oil over medium high heat. Sauté onions and celery in hot oil until onions are translucent. Add in garlic and cook until fragrant.
  • Add in coconut milk and heat until it's completely liquefied. Stir in radishes and turkey. Pour in turkey broth.
  • Season with thyme, salt, and pepper. Bring to a boil, then cover and simmer for 15 minutes.
  • Uncover and add cabbage and kale. Cover and cook for an additional 5 minutes.
