Ingredients

  • ¼ cup diced onion
  • 1 medium green pepper diced
  • 4 cloves garlic minced
  • 2 bay leaves
  • 1 ½ teaspoons salt
  • 8 ounces baby bella mushrooms chopped
  • 1 pound white button mushrooms chopped
  • 1 ½ teaspoons cumin
  • 2 tablespoons chili powder
  • 1 dash ground black pepper
  • 1 cup chopped walnuts
  • 6 ounces tomato paste
  • 4 cups vegetable broth

Instructions

  • Mix all ingredients in a 4 to 6 quart slow cooker crock.
  • Cook on high 3-4 hours or low 6-8 hours.

Additional seasonings can be added to taste like 2 teaspoons of oregano.
