In a mixing bowl, combine the ingredients together and beat on high until smooth and creamy.
Pour the batter evenly into two well greased 6-ounce ramekins.
Bake for 12-15 minutes, or until the edges of the cake are firm, but the center still has a little jiggle to it.
Let cool for several minutes, and then turn over onto a plate to serve.
Garnish with sugar free whipped cream if desired.
You can cook the cakes individually in the microwave, but you'll need to be careful not to overcook the centers.If overcooked, the center won't be molten so be sure to check every few minutes so the cakes can be removed from the oven before the centers are set.
