This keto raspberry vinaigrette is a salad dressing that is both sweet and tart. Not to mention, low in carbs. It only has 2g net carbs in each serving!

Ingredients

  • 1 C. Fresh raspberries
  • ¼ C. Olive oil
  • 3 Tbsp. White wine vinegar
  • Squeeze of fresh lemon juice
  • ½ tsp. Dijon mustard
  • 2 Tbsp. Sugar free honey
  • Salt and pepper to taste

Instructions

  • Place all of the ingredients together into a blender or food processor. Blend until smooth and creamy.
  • Serve over your favorite salad greens.

Notes

Add more lemon juice if you want the vinaigrette to have a thinner consistency.
If you can't find any sugar-free honey, you can use 2 tablespoons of powdered sweetener or an equivalent amount of liquid sweetener.
Store it in a mason jar with a lid. This way you can give it a nice shake before you use it. It might separate, so shaking it will combine the ingredients again.
Store covered in the refrigerator. Keeps up to 30 days.
