Place all of the ingredients together into a blender or food processor. Blend until smooth and creamy.

Add more lemon juice if you want the vinaigrette to have a thinner consistency.If you can't find any sugar-free honey, you can use 2 tablespoons of powdered sweetener or an equivalent amount of liquid sweetener.Store it in a mason jar with a lid. This way you can give it a nice shake before you use it. It might separate, so shaking it will combine the ingredients again.Store covered in the refrigerator. Keeps up to 30 days.
