Lay a sheet of seaweed out on the bamboo mat.
Place a layer of the cauliflower rice mixture over the bottom ⅓ of the wrap.
At the bottom of the layer of cauliflower rice, place some of the avocado slices, cucumber strips and pieces of shrimp in a row.
