Ingredients

  • 24 ounces low-carb marinara sauce
  • cup heavy whipping cream
  • ½ cup chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • crumbled bacon optional garnish
  • parsley optional garnish

Instructions

  • Place the low carb marinara sauce in a pot over medium heat on the stove.
  • Add in the chicken broth, tomato paste, Italian seasoning and salt and pepper to taste. Stir to combine well.
  • Bring the mixture to a very light boil.
  • Mix in the heavy whipping cream, reduce the heat to medium/low, and simmer for 10 minutes.
  • Serve garnished with parsley and crumbled bacon if desired.

Notes

  • Garnish with chopped fresh tomatoes. A few of them will liven up the look of the soup and give it a little more texture too.
  • Make it vegetarian. Use vegetable broth instead of chicken broth and coconut cream instead of heavy whipping cream.
  • Make it spicier. Sprinkle some red pepper flakes and cayenne pepper into the soup.
  • Use it as a base for other soup ideas. Fill with keto noodles and ground beef for a beefy tomato and noodles soup.
  • Make a roasted tomato soup recipe. Garnish with a few fire-roasted tomatoes.
  • Garnish with fresh basil. This is the perfect addition to the fresh parsley.
