Try this decadent fish florentine recipe for a dinner anyone could get behind. Made with cod fillets, heavy cream, and garlic, the results are positively yummy!

Ingredients

  • 2 pounds cod filets
  • 2 tablespoons butter
  • ½ medium onion chopped
  • 2 teaspoon minced garlic
  • ¼ cup chicken broth
  • 1 cup heavy whipping cream
  • 12 ounces frozen spinach thawed and drained well
  • 1 cup pork rind crumbs
  • ¼ cup Parmesan cheese grated
  • salt and pepper to taste

Instructions

  • Preheat the oven to 375°F.
  • Layer the fish in a casserole dish, and season with salt and pepper.
  • Add the butter to a skillet over medium heat. Sauté the onions in the melted butter until softened. Place the garlic into the skillet, and sauté for 30 seconds longer.
  • Pour in the chicken broth and heavy whipping cream, and simmer until thickened.
  • Add the spinach to the skillet, and stir to combine.
  • Season the sauce with salt and pepper to taste. Pour the sauce over the fish in the casserole dish.
  • In a bowl, combine the pork rind crumbs and Parmesan cheese.
  • Sprinkle the crumb mixture over the top of the fish. Bake for 25 minutes. Let rest for 5 minutes before serving.
