Ingredients

  • 8 large eggs
  • ¼ cup heavy cream
  • 1 cup fresh spinach chopped
  • ¼ cup goat cheese crumbled
  • ¼ cup parmesan cheese grated
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 tablespoon olive oil

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat the olive oil over medium heat. Add the chopped fresh spinach and sauté until it wilts, which should take about 2-3 minutes. Remove the spinach from the skillet and let it cool.
  • In a mixing bowl, whisk together the eggs and heavy cream until well combined.
  • Stir in the crumbled goat cheese, grated fresh Parmesan cheese, salt, black pepper, garlic powder, and onion powder into the egg mixture. Mix everything thoroughly.
  • Add the sautéed spinach to the egg mixture and gently fold it in.
  • Heat an oven-safe skillet over medium heat and add a little oil if needed. Pour the egg and spinach mixture into the skillet.
  • Place the skillet in the preheated oven and bake for about 15-20 minutes, or until the frittata is set and slightly golden on top.
  • Once done, remove the frittata from the oven and let it cool for a few minutes. Slice it into wedges and serve.
