Cook cauliflower until soft.
In high speed blender or food processor, puree cauliflower.
Puree in gelatin, cocoa, and sweetener(s) while cauliflower is still warm.
Add in heavy cream and puree until silky smooth.
Pour into serving cups and refrigerate at least 3 hours
