This simple low carb egg salad can be served in a lettuce wrap or bowl. It's a satisfying dish that's perfect for an egg fast too.

Slice eggs, then mix in mayonnaise and mustard until well combined, breaking up eggs as needed.
Season with salt & pepper to taste.
Store leftovers in refrigerator.
Any mayonnaise can be used but one made with healthy fats like coconut oil or avocado oil is recommended.
Additional seasonings like chives and paprika can be added if desired.
