These low carb meatballs can be served immediately or stored in the freezer to enjoy later. Tastes great with marinara sauce and cheese.

Ingredients

  • 3/4 cup milk
  • 1/3 cup crushed pork rinds or crumbs from low carb bread
  • 1 large egg
  • 1 teaspoon salt
  • freshly ground black pepper
  • 3/4 cup Parmesan cheese grated
  • 3 tablespoon fresh parsley or 1 tablespoon dried
  • 1 1/4 pound ground venison beef, or turkey (I used venison)
  • 1 small chopped onion or 1 tablespoon dried minced onion (optional)
  • 1 clove garlic finely minced

Instructions

  • Mix all ingredients together in large bowl.
  • Using large scoop, form mixture into even size balls and place on baking sheet.
  • Bake in oven at 400°F for 25 to 30 minutes.

Notes

Any low carb bread can be toasted and then crumbed if using instead of the pork rinds.
