Melt the butter in a medium saucepan over medium heat.
Stir in the garlic and baby spinach. Cook and stir 2 to 3 minutes, until spinach is wilted.
Mix in salt and pepper. Remove from heat and transfer to a medium bowl.
Melt cream cheese into almond milk over low heat. Add to spinach.
Add parmesan and mozzarella cheese into the bowl with the spinach mixture.
Transfer mixture to a medium baking dish.
Bake at 350 degrees F for about 20 minutes, or until bubbly and lightly browned.
- Add bacon: Everything is better with bacon, right? Add some cooked, crumbled bacon to the mixture before baking for an extra savory kick.
- Make it spicy: For a little heat, add some diced jalapenos or red pepper flakes to the mixture. You can also serve it with hot sauce on the side for dipping.
- Try different cheeses: If you're not a fan of parmesan or mozzarella, feel free to experiment with other types of cheese in this dip. Cheddar, gouda, or even blue cheese would all be delicious options.
- Make it vegan: If you follow a vegan diet, you can still enjoy this creamy spinach dip by using dairy-free cream cheese and shredded cheese alternatives.
