A warm low carb spinach cheese dip loaded with healthy baby spinach. Makes a great appetizer when served with low carb veggies, chips, or pork rinds.

Ingredients

  • 3 tablespoons butter
  • 2 cloves garlic peeled and chopped
  • 12 ounces baby spinach
  • salt and pepper to taste
  • 1/4 cup parmesan cheese
  • 2 cups mozzarella cheese shredded
  • 8 ounces cream cheese
  • 1/2 cup almond milk

Instructions

  • Melt the butter in a medium saucepan over medium heat.
  • Stir in the garlic and baby spinach. Cook and stir 2 to 3 minutes, until spinach is wilted.
  • Mix in salt and pepper. Remove from heat and transfer to a medium bowl.
  • Melt cream cheese into almond milk over low heat. Add to spinach.
  • Add parmesan and mozzarella cheese into the bowl with the spinach mixture.
  • Transfer mixture to a medium baking dish.
  • Bake at 350 degrees F for about 20 minutes, or until bubbly and lightly browned.
