A low-carb spinach dip loaded with a healthy green leafy vegetables. This hot spinach cheese dip makes a great appetizer served with veggies.

One of my favorite appetizers is tortilla chips with spinach artichoke dip. I rarely have this since tortilla chips are a bit too high in carbs for me.
So, when I do have this appetizer, I skip the chips and use vegetables or pork rinds instead for dipping. And, sometimes I just eat it right out of the dish with a spoon.
Last week when I was craving some dip, I came up with a low carb spinach dip recipe. I decided to use spinach because I didn't have any artichokes on hand.
This yummy concoction is made by first melting butter in a pan. Then minced garlic and baby spinach are added until the leaves are wilted. Then seasonings are added.

A block of cream cheese is then added to the hot pan and melted in some unsweetened almond milk. The hot creamy mixture is then added in with the buttery spinach.
To make the dip super cheesy, a little bit of parmesan and a bunch of mozzarella are mixed in. The mixture in then spread into a baking pan.
The low carb spinach dip should be nicely browned in about 20 minutes and ready to serve with your choice of veggies or low carb chips. I typically opt for crunchy pork rinds.
You can just grab a spoon if you don't have anything to dip into the hot mixture. And, I bet this would also make a yummy topping over a reverse sear steak!

This hot spinach cheese dip is very cheesy. But, the spinach pieces were a bit large. I recommend chopping up the baby spinach leaves in a food processor before using.
Even with the big pieces of spinach, the dip was a huge hit. So, if you love spinach and cheese as much as I do, you are going to really enjoy this yummy low carb spinach dip.

This warm spinach cheese dip is perfect for serving during the winter holidays. You could even make some homemade low carb tortilla chips like the recipe here to serve with it.
There's crunchy tortilla like chips that you can buy. Proting chips are one of my favorites and they really hit the spot when I'm in the mood for chips.
I also have a warm crab dip recipe. I've served that dip with store bought flax crackers. But, you can make your own low carb crackers too.

Warm Low Carb Spinach Dip with Cheese

Ingredients
- 3 tablespoons butter
- 2 cloves garlic peeled and chopped
- 12 ounces baby spinach
- salt and pepper to taste
- ¼ cup parmesan cheese
- 2 cups mozzarella cheese shredded
- 8 ounces cream cheese
- ½ cup almond milk
Instructions
- Melt the butter in a medium saucepan over medium heat.
- Stir in the garlic and baby spinach. Cook and stir 2 to 3 minutes, until spinach is wilted.
- Mix in salt and pepper. Remove from heat and transfer to a medium bowl.
- Melt cream cheese into almond milk over low heat. Add to spinach.
- Add parmesan and mozzarella cheese into the bowl with the spinach mixture.
- Transfer mixture to a medium baking dish.
- Bake at 350 degrees F for about 20 minutes, or until bubbly and lightly browned.

I use either coconut milk in a carton or a mixture of half water and half heavy cream.

It typically thickens after cooling. Maybe too much liquid from the spinach?
