This cottage cheese queso is a creamy, cheesy dip that’s surprisingly healthy and incredibly easy to make. Blended until smooth and melted with cheddar, cream cheese, and zesty taco seasoning, it delivers all the rich, comforting flavor of traditional queso—without the extra carbs.
Add cottage cheese, cream cheese, and taco seasoning to a blender. Blend 30–60 seconds until completely smooth. If the sauce is too thick to blend, thin it with 1-2 tablespoons of water.
Pour mixture into a small saucepan on low heat. Add shredded cheddar cheese, butter, and diced green chilies. Stir continuously until fully melted and smooth.
Pour into a bowl and serve warm!
