Instructions
Using a Ninja Creami:
Whisk together the lemon juice, water, powdered sweetener, lemon zest, and xanthan gum in the Creami pint container until the sweetener and xanthan gum are fully dissolved.
Secure the lid on top of the pint container and place it in the freezer. Freeze for at least 24 hours, or until completely solid.
Once the mixture is frozen, remove the container from the freezer and remove the lid.
Insert the container into the Ninja Creami and secure the lid with the blade attachment.
Select “Full”, turn the knob to "Sorbet" function and let the Ninja Creami process the mixture until smooth and creamy.
If needed, use the "Re-spin" function to achieve the desired consistency.
Serve immediately or store in the freezer for later use. If storing, allow the sorbet to soften slightly before serving.
Without an Ice Cream Maker:
In a medium bowl, whisk together the lemon juice, water, powdered sweetener, lemon zest, and xanthan gum until the sweetener and xanthan gum are fully dissolved.
Pour the mixture into a shallow, freezer-safe dish.
Place the dish in the freezer. Every 30 minutes, remove the dish from the freezer and stir the mixture with a fork, breaking up any ice crystals that form.
Continue this process until the sorbet is fully frozen and has a smooth, scoopable texture. This should take about 2-3 hours.
Once the sorbet is ready, scoop and serve immediately. If storing in the freezer, allow the sorbet to soften slightly before serving.
