Grate the cucumber well with the peel on, and then squeeze as much of the moisture out of it as possible.
Add all of the ingredients into a bowl, and stir well to combine.
Serve with freshly chopped keto-friendly vegetables or meat.
Any of these methods can be used to remove the moisture from the grated cucumber:
Take a handful of grated cucumber at a time and squeeze it between your palms over the sink. Set it on a paper towel until you’re ready to use.
Add grated cucumber to a fine mesh sieve and press with paper towels to squeeze out the liquid.
Salt the cucumbers to draw out the water. Add the grated cucumber to a sieve over a bowl, toss with salt, then allow it to sit for about 15 minutes.
