These keto pulled pork nachos are a delicious alternative to traditional nachos. Not only are they just as good, but they are low-carb and keto-friendly as well!
2Heads Cauliflowercut in florets, combined weight about 700 grams
2Small Tomatoeschopped
1Medium Green Bell Pepperchopped
2Green Chillies or Jalapéñosliced
2TeaspoonLow Carb Taco Seasoning
½CupParmesan
1CupFreshly Grated Mozzarella Cheese
Salt and Ground Black Pepperto taste
2 to 3TablespoonOlive Oil
Instructions
In a baking sheet lined with slightly greased parchment paper, spread cauliflower florets. Brush lightly with olive oil. Season all sides with low carb taco seasoning. Opt to add salt and pepper.
Roast cauliflower in a preheated oven at 375°F for 5 to 7 minutes.
Top cauliflower florets with pulled pork, tomatoes, bell pepper, parmesan and mozzarella cheese. Add chillies on the side. Return to oven and bake for 10 to 12 minutes or until cheese has melted.

Serve with sour cream, guacamole, and or salsa if desired.You can use all kinds of vegetables in the place of chips - cauliflower is just the most popular option! You can alternatively use zucchini fries, green beans, bell pepper, turnips, carrots, or anything you can get to crisp up a bit in the oven.Keto friendly tortilla chips are also an option!
