Ingredients

  • 3 pounds beef chuck roast cut into large chunks
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 small onion diced
  • 2 chipotle pepper in adobo sauce minced (adjust to taste)
  • 2 tablespoons adobo sauce from the chipotle peppers can
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • ½ teaspoon ground allspice
  • 2 bay leaf
  • ½ cup beef broth
  • 1 lime
  • salt to taste
  • ground black pepper to taste

Instructions

  • Cut the chuck roast into large 1-2 inch cubes and place it in the slow cooker.
  • Add olive oil, diced onion, garlic, minced chipotle pepper, adobo sauce, cumin, oregano, paprika, coriander, allspice, and bay leaf. Mix to evenly coat the beef in the seasoning.
  • Pour the beef broth into the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender and falls apart easily.
  • Once cooked, shred the beef using two forks. Stir in lime juice. Let the meat rest in the juice for at least 10 minutes before serving.
