Cream soups often contain thickeners which add unnecessary carbs. This low carb version uses a low carb thickener instead.

  • 1 1/2 cups mushrooms cooked and chopped
  • 14 ounces chicken bone broth
  • 1 teaspoon dry minced onion
  • 1/8 teaspoon dried thyme
  • 1 tablespoon butter
  • 1/2 teaspoon guar gum
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup heavy cream
  • 1/2 cup almond milk
  • 1 tablespoon white cooking wine


  • Combine mushrooms, broth, onion and thyme in large saucepan. Cook about 10 to 15 minutes.
  • Add butter. Sprinkle in guar gum and whisk until blended in. Add the salt, pepper, heavy cream, almond milk, and cooking wine. Stirring frequently, bring soup to a boil and cook until thickened. Adjust seasonings to taste.
