This easy Chicken Cordon Bleu Casserole has all the rich, creamy flavors of the classic dish with a keto-friendly twist. With juicy chicken, ham, Swiss cheese, and a mustard cream sauce, it’s perfect for weeknights or special occasions!

Ingredients

  • ¼ cup mayonnaise
  • ¼ cup heavy cream
  • 8 ounces cream cheese softened
  • ¼ cup Parmesan cheese
  • ½ teaspoon garlic powder
  • dash fresh ground pepper
  • 8 ounces Swiss cheese chopped
  • 1 pound ham chopped
  • 20 ounces cooked chicken shredded or chopped
  • ½ cup chicken bone broth or stock (optional)
  • ½ cup crushed pork rinds optional

Instructions

  • Mix mayonnaise, heavy cream and cream cheese until well combined.
  • Stir in the Parmesan cheese, garlic powder, and pepper.
  • Add in the Swiss cheese , ham, chicken, and chicken broth.
  • Spread mixture out into a 9x13-inch casserole dish. Top with crushed pork rinds if desired.
  • Bake at 350°F for 20-25 minutes or until top begins to brown.

Notes

A couple commenters noted that the casserole was watery. The broth is not necessary and can be left out to reduce liquid! 
Additional tips:
  • The swiss cheese will be chopped, but you can use shredded if you have it.
  • Make sure you cut the chicken breast into strips or use the pre-cooked meat.
  • Add some plain crushed pork rinds over the top as this gives it the crunchy topping.
