It's Labor Day Weekend and things are looking up. We had a very difficult time last week. Tropical Storm Irene came through our area last weekend and we lost power from Sunday to Thursday evening.
We have our own well. So, without a generator, we would have been without water as well. Luckily, the storm had given us some advanced notice. And we had been making preparations prior to getting hit.
My husband pulled our generator out of the basement and got it running after 7 years of storage. He managed to find an electrician who was able to wire the generator to our breaker panel using a transfer switch.
I'm not sure how we would have managed without that generator. At least we had a few lights wired as well as kitchen outlets, the freezer, the fridge, the well, and the furnace.
The continued loss of power put a strain on our generator. It blew a head gasket so we had to have it fixed several days into the storm.
However, I'm glad that we were able to save all our food and had hot running water for showers and cleaning. Many of our neighbors, family and friends lost all the food in their refrigerators and freezers and had to go nearly a week without water or power.
The extended loss of power really made me appreciate the things I have. It's easy to take things for granted when life is going well.
Now that things are somewhat back to normal, I have time to get back on the internet and post this eggplant tomato sauce pepper recipe. Before the storm hit, we did pick as much as we could from the garden.
I had an eggplant and peppers sitting in the fridge that I needed to use up after power was restored. The past week was exhausting so I wanted a quick and easy recipe. This eggplant tomato recipe with tomato sauce is what I came up with.
After a long time without power, it was nice to relax with a simple meal. I served this eggplant tomato recipe with some grilled steaks. It would also go well with grilled chicken.
I'm sure I'll be more into my regular routine next week. It's going to take a little while to get back into the swing of things.

Eggplant and Peppers in Tomato Sauce
Ingredients
- ¼ cup olive oil
- 4 cloves garlic minced
- medium eggplant cut into small strips
- large green bell pepper seeded and sliced
- large red bell pepper seeded and sliced
- 8 ounces canned tomato sauce
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Saute eggplant in oil until it is soft and brown.
- Add garlic and continue sauteeing until garlic is golden. Remove from pan and set aside.
- Stir fry the peppers until they are soft.
- Combine vegetables and add tomato sauce, salt and pepper. Simmer until sauce is warm.
- Can be served warm or at room temperature.
