Strawberry Sauce for Cheesecake and Pancakes

Ingredients
- 1 pound fresh strawberries washed, hulled and sliced
- ¼ cup low carb sugar substitute can be adjusted to taste
- ½ cup water
Instructions
- Place the strawberries in a medium pot. Sprinkle on sweetener and pour in water.
- Heat over medium heat for 10 to 15 minutes to soften strawberries.
- Remove from heat and allow to cool. Store covered in the refrigerator for up to a week.
- Use to flavor plain yogurt, or as a topping for ice cream and waffles.

Yes. This strawberry sauce is a great yogurt topping. I usually mix it into plain unsweetened Greek style yogurt.

looks nice, I personally tend to stay away from fruit as it can kick you out of ketosis because of the way fructose is metabolized in the liver, but if your not aiming to stay in ketosis this looks like a great recipe!

Good point on the fruit for those in ketosis. I have found that I can continue to lose weight with fruit as long as I keep my daily caloric intake low. Although calories aren't supposed to matter with low carb dieting, I've found I lose weight best by eating both low carb and low calorie.
